finally it is a real ohio november: cold & grey & full of rain. the bus on the way home was very crowded, people stood in the aisle & all the windows fogged over. very strange to use street lights & shop lights & neon signs to get your bearings, when nothing else comes through the window. i
should be uncomfortable on an over-crowded bus. instead i was very happy, feeling safe to be out of the wet.
tonight bean & i will go out into the cold & the grey (which will by then be black of course) to see, finally, harry potter. a perfect night for it, & a perfect night to walk out of the theater bundled in our coats & then go home to cats & tea, & what's left of the pumpkin cupcakes i made last night.
�� pumpkin cupcakes� cream together:
�� 2/3 c shortening
�� 2 2/3 c sugar
� combine, then add to creamed mixture:
�� 1 c applesauce
�� 1 can (1 lb) pumpkin
�� 2/3 c water
� combine, then add to wet:
�� 3 1/3 c flour
�� 2 tsp baking soda
�� 1 1/2 tsp salt
�� 1/2 tsp baking powder
�� 1 tsp ground cinnamon
�� 3/4 tsp ground cloves
� do not overmix!
� fold in 2/3 c chopped nuts (walnuts or pecans probably).
� pour into lined muffin tins & bake in 350� oven for 20-30 minutes, until tester inserted into center comes out slightly crumby.
� or pour into greased+floured loaf pans & bake at 350� for 65-75 minutes.
